Reindeer Stew with Red Rubies from the North


  • 500 g rein deer
  • (should be in the frozen section or order on line from some of the scandi shops in the UK)
  • Butter
  • 2 yellow onions
  • 2 cloves of garlic
  • 250 ml cream
  • 250 ml water (or milk)
  • 2 tbs concentrated black currant juice
  • 2 tbs beef stock
  • 2 pinches of white pepper
  • 2 tbs corn starch (optional)
  • 150 ml lingon berries (fresh or frozen)
  • 50 ml finely chopped parsley or thyme
  • Cooked potatoes for serving
