After a successful career as an accountant, in 2007, she decided to follow her heart and dedicate her time to food. In this series, Anita shares her Kenyan-Indian fusion recipes, which are of course, vegetarian and vegan friendly!

Spiced Kenyan Okra

Ingredients

  • 3 tbsp sunflower oil
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • 1 red onion , finely chopped
  • 2 tomatoes chopped
  • ½ tsp turmeric
  • ¾ tsp garam masala
  • ½ tsp chilli powder
  • 1 lemon, juiced
  • 300g okra, topped and tailed, slit down lengthways
  • Salt to taste
