Fermented Lentil Doughnuts

Ingredients

  • FERMENTED LENTILS:
  • Moong Dal 150gm
  • Chopped Ginger 10gm
  • Chopped Chilli x1
  • Cumin Seeds 1/2 tsp
  • Salt to taste
  • CARROT AND MOOLI:
  • Carrot, peeled and grated x1
  • Mooli, peeled and grated x1
  • Pinch of Black Salt
  • Pinch of Red Chilli Powder
  • TAMARIND WATER:
  • Tamarind Pulp 50gm
  • Degi Mirch Powder 1/4 tsp
  • Pinch of Asofetida (Hing)
  • Water 200ml
  • Coriander 1 tbsp
  • Chopped Green Chilli x1
  • CORIANDER MINT CHUTNEY:
  • Coriander x1 bunch
  • Mint 1/3 of bunch
  • Garlic cloves 2x
  • Black Salt 1/4 tsp
  • Juice from 1x lemon
  • FOR GARNISH:
  • Coriander cress
  • Thinly slice breakfast /Japanese radish
  • Chilli oil
