Daluma's Cauliflower Grain Bowl with Pomegranate
Ingredients
- Quinoa Base:
- 1 cup of quinoa
- ½ tsp salt
- 1 ½ cup of water
- Once cooked- mint, parley, olive oil and pumpkin seeds or other nuts
- Turmeric Cauliflower:
- 1 head of cauliflower
- 1tbsp. turmeric
- ½ tsp salt
- Pea Hummus:
- 400g can of chickpeas
- 300g Fresh or Frozen peas
- 2 tbsp Tahini
- 2 tsp lemon juice
- 4 tbsp Aquafaba
- Pinch of salt and pepper
- Parsley
- White Bean Spread:
- 400g can butter beans
- 1/2 tsp. Lemon Zest
- 1 tbsp. Lemon juice
- 1 tbsp Olive Oil
- 2 tbsp Aquafaba
- Coriander
- Cucumber and Tomato Salad:
- 1 Cucumber
- 10 Cherry tomatoes
- 1 tbsp Olive Oil
- Parsley
- Mint
- 1 tsp Lemon Juice
- Red Bell Pepper
- Salt and Pepper
- Garnish:
- Herbs (Parsley, Mint & Coriander)
- Pomegranate Seeds
