  • 200g green beans, tails removed
  • 8 eggs, beaten in jug
  • ¼ tsp turmeric
  • 2 spring onions, roughly chopped
  • Large bunch fresh coriander, stems finely chopped and leaves picked
  • 2 tbsp olive oil
  • 2 pickled shallots, quartered
  • Anchovies, torn
