Black Pepper Tortilla
300ml olive oil (the best you can afford)
1 medium onion, thinly sliced into half moons
600g Maris Piper potatoes, sliced evenly, rinsed and dried
6 Yokel eggs, roughly beaten in a medium sized bowl
Freshly cracked black pepper
Small bunch of chives, finely chopped, for garnishing
