Aubergine Fatteh


  • 500g aubergine, cut into cubes, skin on
  • 3 pieces of pita bread, cut into cubes
  • 250g minced meat
  • 1 onion, chopped
  • 1 tsp mixed meat Arabic spices
  • Salt and pepper
  • 1 tbsp pomegranate molasses
  • 250g greek yogurt
  • 1 tbsp garlic, minced
  • 2 tbsp lemon juice
  • Olive oil to drizzle
