This original masterclass on wood-fired oven cooking is the ultimate introduction to using your oven and producing delicious and flavourful food. In this episode, you will learn your first technique of wood-fired cooking - grilling. This masterclass episode will show you two different techniques for using your wood-fired oven to grill, one will be used to grill a steak and the other to make vegetable and halloumi skewers. From the tools needed to all the experienced tips and tricks in between, David will explain how to get the perfectly grilled steak and veggies. About Manna From Devon: Established in 2005, the Manna from Devon Cooking School and Bed and Breakfast is run by Holly and David Jones. They teach cooking skills to small groups in the relaxed environment of our Victorian home overlooking the beautiful River Dart in South Devon. They also have two beautiful bed and breakfast rooms. Holly and David believe that cooking should be free of stress or anxiety, and structure courses to emphasise hands-on practice of good, basic culinary techniques rather than slavishly following a particular recipe. In this way they hope to impart to their students the confidence to cook intuitively, to trust their senses, and to have fun while doing so!

Steak with Lemon, Parsley and Black Pepper butter with Grilled Vegetable and Halloumi Skewers

Ingredients

  • For The Steak:
  • 1 x ribeye steak – about 700g, cut 3cm thick. Ask your butcher to do this.
  • 80g softened butter
  • 1tbsp finely chopped fresh parsley
  • 1tsp coarsely ground black pepper
  • Finely grated zest of 1 lemon
  • Olive oil
  • Salt & Pepper
  • For The Skewers:
  • 100g halloumi, cut into 2.5cm cubes
  • 1 red onion, peeled & cut into 8 wedges 1 red pepper, deseeded & cut into 2.5cm squares
  • 6 cherry tomatoes
  • 6 small mushrooms
  • 1tbsp piri piri sauce
  • Olive oil
