Flowery and Fresh Potato Salad with Tarragon Dressing
Ingredients
- Potato salad:
- 1 kg new potatoes
- 8 eggs
- 1 bag of spinach
- Edible flowers for decorations
- Dressing:
- 8 egg yolks
- 4 tbs rapeseed oil (but add more until you reach a mayo consistence)
- 2 tbs apple cider vinegré
- 1 tsp granulated mustard
- Fresh tarragon
- 1 fresh garlic with green stalk
- Salt
- Pepper
