  • Potato salad:
  • 1 kg new potatoes
  • 8 eggs
  • 1 bag of spinach
  • Edible flowers for decorations
  • Dressing:
  • 8 egg yolks
  • 4 tbs rapeseed oil (but add more until you reach a mayo consistence)
  • 2 tbs apple cider vinegr√©
  • 1 tsp granulated mustard
  • Fresh tarragon
  • 1 fresh garlic with green stalk
  • Salt
  • Pepper
