Stress Free Coconut Curry
Ingredients
- 1 tbsp olive oil
- 1 cup broccoli or green beans
- 1 red onions
- 1 sweet potato
- 1 lemongrass stick
- 2 carrots
- ½ courgette
- 2 tsp curry powder
- 1 tbsp red curry paste
- 1 can coconut milk
- 1 can of chickpeas, cooked
- ½ tsp salt
- 1 lemon or lime, juiced
- 1 cup basmati or whole grain rice, cooked (optional)
- ½ cup roasted cashews or peanuts or sunflower seeds
