Where red shakshuka is tomato-based, this dish revolves around the British garden, incorporating peas, dill, chillis, kale and feta cheese. With merguez lamb sausages and eggs, fresh flavours create a filling meal.

Green Eggs Shakshuka with Merguez Sausages

Ingredients

  • 6 Merguez sausage
  • 1 white onion
  • 1 green pepper
  • 1 green chilli
  • 1 clove of garlic
  • 1 teaspoon cumin seeds
  • 2 teaspoons coriander seeds
  • 1 teaspoon dried oregano
  • olive oil
  • 100 g cavolo nero
  • ½ a Lemon
  • 100 g baby spinach
  • 50 g frozen peas
  • 4 large free-range eggs
  • ¼ a bunch of coriander
  • ½ a bunch of mint
  • ½ a bunch of dill
  • 40 g feta cheese
  • 200ml Greek yoghurt
