This dish really delivers on flavour considering how quick and easy it is to prepare!
The honey and gochujang chilli paste caramelise into a spicy, sweet and salty crust around the potatoes which go into the oven first. Then, when the salmon steaks and broccoli go on top, the juices from the fish mix with the caramelised gnarly bits formed around the potatoes, creating a delicious self-saucing dish that you’ll come back to again and again!
Korean Roast Salmon with Sweet and Spicy Potatoes
3 tablespoons gochujang chilli paste
1 tablespoon dark soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
600g new potatoes, cut into halves
200g tenderstem broccoli
4 x 125g salmon fillets
1 teaspoon toasted sesame oil
1.5 teaspoons black sesame seeds (you can also use white or a mix!)
