Lemon Scented Meatballs
1 large bulb of fennel, trimmed slightly, but with the root left intact, cut into 8 wedges
550g small potatoes, cut into halves
1 large red onion, peeled and cut into 8 wedges
200g chantenay carrots, scrubbed clean and halved (if particularly large)
