Lemon Scented Meatballs

Ingredients

  • 1 large bulb of fennel, trimmed slightly, but with the root left intact, cut into 8 wedges
  • 550g small potatoes, cut into halves
  • 1 large red onion, peeled and cut into 8 wedges
  • 200g chantenay carrots, scrubbed clean and halved (if particularly large)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 2.5 teaspoons fennel seed, lightly crushed
  • 50g panko breadcrumbs
  • 75ml milk
  • 500g lean pork mince
  • 1 teaspoon oregano
  • zest of 1 lemon
  • 25g Parmesan, finely grated
  • 2 garlic cloves, finely grated
  • 1 egg
  • 150ml dry white wine
  • 3 tablespoons crème fraiche
  • 4 tablespoons parsley, roughly chopped
  • salt
  • black pepper
