One-Pot Recipes: Spiced Cauliflower and Red Lentil Dahl

This comforting one-pot dahl is a great one to add to your repertoire. A classic blend of spices with ginger and garlic give the dish a little heat that doesn’t overwhelm. You’ll use the same pan to pan roast the cauliflower too, so less time spent washing up!

One-Pot Spiced Cauliflower and Red Lentil Dahl


  • 2 tablespoons vegetable oil
  • 50g unsalted butter
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon nigella seeds
  • 1 pinch of chilli flakes
  • 1 medium cauliflower, separated into small florets
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 tablespoon ground coriander
  • ¼ teaspoon chilli powder
  • 1 onion, finely chopped
  • 4 garlic cloves, finely grated
  • 1 tablespoon ginger, peeled and finely grated
  • 200g chopped tinned tomatoes
  • 250g red lentils
  • 1 litre hot vegetable stock
  • salt
  • 4 tablespoons fresh coriander, chopped
  • Plain yoghurt
