Tiramisu Crêpe Cake


  • For the crêpes: 12 large free-range eggs
  • 500ml whole milk
  • 250ml single cream
  • 2 tsp vanilla extract
  • 250g plain flour
  • ½ tsp fine sea salt
  • Unsalted butter for frying
  • For the filling: 500g mascarpone
  • 500g full-fat soft cheese
  • 140g icing sugar
  • 75ml espresso or strong coffee
  • 2 tbsp amaretto
  • 200ml double cream
  • Cocoa powder for dusting
