Ingredients
- For the crêpes: 12 large free-range eggs
- 500ml whole milk
- 250ml single cream
- 2 tsp vanilla extract
- 250g plain flour
- ½ tsp fine sea salt
- Unsalted butter for frying
- For the filling: 500g mascarpone
- 500g full-fat soft cheese
- 140g icing sugar
- 75ml espresso or strong coffee
- 2 tbsp amaretto
- 200ml double cream
- Cocoa powder for dusting
