15 Minutes Dippy Eggs
Ingredients
- 90g harissa paste or reduced tomato sauce
- 100g marinated artichokes, roughly chopped
- ½ red chilli, deseeded and diced
- ½ banana shallot, sliced in half moons
- Small bunch coriander, leaves picked and stalks chopped
- Small bunch thyme, destemmed
- 2 gluten-free wraps, roughly 20cm diameter
- 2 eggs
- 100g feta
- Rocket leaves, massaged with a drizzle of olive oil and squeeze of lemon, to garnish
