Crab and Mackerel Boats
Ingredients
- 1 medium cucumber
- 1 red chilli, deseeded and diced
- 1 medium red onion, diced and in a small bowl of water
- 4 cornichons, diced
- 3 smoked mackerel fillets (around 200g)
- 1 lemon and juiced
- 3 tablespoons mayo
- 2 soft-boiled eggs, peeled and quartered
- 100g picked white crab meat
- Small bunch parsley, finely chopped
- Baby gem lettuce leaves, rinsed and dried
- Handful of chervil leaves, wrapped in damp kitchen towel
- Rye crisps
