Another classic Thai dish - Thai jungle curry or Gang Pa, that is very tasty and healthy. This is a well-known dish from the mountain city of Chiang Mai. It is originally made with ingredients found in the jungles of Thailand. It's a water based curry (no coconut milk) so that is why it's called Jungle curry as you can't find coconuts in the jungle!

Thai Jungle Curry

Ingredients

  • 1 cup pumpkin or butternut squash (cut up to bite size)
  • ½ cup green bean, cut into bite size
  • ½ baby corn, cut into bite size
  • 1 cup mixed mushroom
  • 1-2 carrots, cut into bit size
  • A handful of Thai basil
  • 2-3 vine of young peppercorns
  • 1 tbsp toasted ground rice
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tbsp Thai red curry
  • 1 lemon grass, thin slice
  • 2-3 tbsp Thai lesser galangal or Fingerroot or in Thai - ‘Kra Chai’, shredded
  • 120 ml or vegetable stock or water
  • 1 tbsp vegetable cooking oil
