This original masterclass on wood-fired oven cooking is the ultimate introduction to using your oven and producing delicious and flavourful food. In this episode David will demonstrate how you can make two types of bread in your wood-fired oven, garlic dough balls and focaccia. From start to finish these instructions will show you how easy it is to make your own bread in the oven. Just be sure you don’t serve too many dough balls before dinner - guests won’t be able to resist! About Manna From Devon: Established in 2005, the Manna from Devon Cooking School and Bed and Breakfast is run by Holly and David Jones. They teach cooking skills to small groups in the relaxed environment of our Victorian home overlooking the beautiful River Dart in South Devon. They also have two beautiful bed and breakfast rooms. Holly and David believe that cooking should be free of stress or anxiety, and structure courses to emphasise hands-on practice of good, basic culinary techniques rather than slavishly following a particular recipe. In this way they hope to impart to their students the confidence to cook intuitively, to trust their senses, and to have fun while doing so!

Garlic Dough Balls and Focaccia


  • For The Garlic Dough Balls:
  • 1⁄2 batch pizza dough Semolina
  • 80g butter
  • 3 cloves, garlic, peeled and crushed 1tbsp finely chopped fresh parsley
  • Parmesan cheese for grating
  • For The Focaccia:
  • 250g 00 flour
  • 175g cool water
  • 25g olive oil
  • 5g fine seasalt
  • 3g quick acting dried yeast
  • Sliced tomatoes Basil oil Coarse seasalt
  • More olive oil
